Flavors

For the topping:

1 cup Gf bread crumbs (You can make these by drying Gluten Free Bread in an oven at 150 Degrees, cut off the crusts and place them in a food processor to make the crumbs)
1 Tbsp butter for casserole dish

Cream Sauce
2 ¾ cups half-and-half (You can use cream and milk to find your own balance, but i find half and half works just fine)
¼ tsp cayenne pepper
8 ounces sharp white cheddar, grated
2-3 ounces parmesan, grated fine
½ tsp fresh ground nutmeg
2 Tbsp arrowroot starch (or other Gluten Free starch)
4 ounces Gruyere cheese, grated (Any cheese that melts well - even cheddar if nothing else - But avoid using mild cheeses because the flavor will be lost)
½ tsp kosher salt
½ tsp fresh ground pepper

Begin by Pre-heating your oven to 350 Degrees.

Cook your macaroni for about two minutes less than the holder says. When it's done, drain and rinse in some cold water so it stops cooking from its own heat.

For your topping, melt your tablespoon of butter, mix in your bread crumbs.

For the cream sauce, put your half and half into a 3 quart pot. Add the starch, and heat on medium until everything is nicely thickened. Take off from the heat and add your cheddar and other cheeses, stirring until they're melted together. Throw in the salt, cayenne pepper, quarterly pepper, and nutmeg. After it's all mixed, add your macaroni noodles.

Pour your macaroni into a greased casserole dish, and sprinkle your Parmesan and your bread crumbs on the top of it.

Throw it in the oven until it begins to brown on top. (30 minutes should be good)
